Stuffed red peppers:

Stuffed red peppers recipe from Ayuspa is easy to cook and adds variety at dinner table. Can be use as a main course or starters.  Lovely to served with Dal and rice.   Serves 3-4

You need

6 Red long pepper (also known as Turkish Pepper)

1 small onion finely chopped

2 medium size boiled and mashed potatoes

1 cup boiled and mashed green peas

1 teaspoon cooking oil

1 teaspoon cumin seed

1/4t teaspoon turmeric powder

2 tablespoon coconut powder

salt to taste

Fresh coriander leaves to garnish

Preheat oven at 180.   Put a heavy-based saucepan on high heat,  add oil, once oil is hot add cumin seeds let it splutter, add chopped onion and cook for 2-3 minutes.  Add turmeric powder and coconut powder stir well,  add mashed peas and potatoes and salt and mix well with rest of the mixture. Let it cool down.

Cut red pepper horizontally ( so the other side is still intact), take out any seed it might be bit hot. Use a spoon and fill the potato stuffing through the slit into pepper (don’t overfill).  Fill stuff into each one.  Put all stuffed pepper into an overproof tray,  spray little oil over them.  Put the tray into the oven and grill for 10 min.
