Ingredients
- 1 Grated small to medium size Loki/ Zucchini
- 2-3 cups Besan, chickpea flour
- 2 teaspoon cumin seeds
- 1 finely chopped medium size onion
- 1 medium size chopped capsicum
- Salt according to taste
- Cooking oil
Method.
Grate loki/zucchini, add onion and capsicum, cumin seeds, slowly add besan (Chickpea flour) and mix, the juice from grated loki/ zucchini will be enough to make soft runny batter. If it is too runny add more chickpea flour.
Once it is thick -runny consistency, take a big spoonful and spread on flat heated pan (like you make pancake). Let it cook and put few drops of cooking oil around the edges. Gently flip the cake and again put oil around the edge. Once it looks golden brown and cook take it out from pan.
Serve with yogurt Raita
